Sodexo Prestige & Ridgeview Winery to host Amex Stadium dinner

Sodexo Prestige Venues & Events, catering and event specialist at Brighton’s Amex Stadium – home to Brighton and Hove Albion Football Club – has partnered with Sussex-based Ridgeview Winery for a wine pairing dinner on Thursday 29 June.

Family-owned Ridgeview produces the highest quality sparkling wine using traditional sparkling grape varieties and methods and has won numerous international trophies.

And its experts have joined forces with the stadium’s team of chefs to choose wines, which complement a three-course menu, featuring the finest local sourced and seasonal produce.

The dinner will begin with a starter of oak smoked salmon and trout cannelloni, sweetcorn panna cotta, minted peas and smoked streaky bacon, which will be paired with Ridgeview’s Bloomsbury wine; a light drink, with flavours of citrus, peach and brioche.

This will be followed by roast breast of free range chicken stuffed with a watercress and pine nut mousseline, butter braised thyme fondant potato, carrot and tarragon purée, steamed asparagus and a light Maderia jus, partnered with Cavendish wine, with notes of red berries, almond and toast.

A dessert of white chocolate mousse with meringue, strawberry jelly and fresh and dehydrated strawberries will then be served alongside Fitzrovia Rosé, which has flavours of raspberry, citrus and honey.
