The man behind Salvation In Noodles is bringing a new Vietnamese restaurant to London’s Notting Hill on 6 September.
Owner of both restaurants, Colin Tu, has again taken inspiration from his travels in South East Asia with MAM, pronounced ‘mum’, which means fermentation in Vietnamese.
Tu’s new Notting Hill restaurant is inspired by barbecue street food stalls found all over Vietnam, with the menu featuring a range of mainly chicken skewers cooked on a robata grill.
Other dishes will include Hanoi-style pho, rice bowls topped with braised short rib or pork belly and egg, as well as classic Vietnamese starters.
